My 3 Favorite Vegan Recipes

I get this question pretty much on daily basis:

Where do you get the time to prepare all the meals for you and Joe?

…and the answer is…

I don’t!

We are super busy, and when it comes to food preparation I’m all about efficiency.

That’s why I’ve become a master of quick, healthy, plant based meals that anyone can make in no time.

Today I want to share three of my favorite recipes with you. Joe and  I make these on a regular basis.  The best part is that all these recipes are quick, easy and use zero animal products!

Give them a try today, I am sure you’ll LOVE them.

1.Easy Hummus

Why buy hummus (in most cases packed with preservatives) when you can just make it at home!

  • 1 can chick peas ( drain and washed)
  • 1/3 cup Tahini (ground sesame seeds)
  • Juice of 1-2 lemons
  • 2 TB Olive oil
  • water as needed
  • Salt to taste

Just food process it up and you have hummus.
Our favorite add-ins (mix or match)

2 cloves garlic
2 TB parsley
2 TB Basil
2 ts paprika
Sun-dried tomatoes

We take this to work  as a healthy and delicious  dip for carrots, peppers or apples . Also great with pita or in sandwiches.

2. Mexican Quinoa and Lentil Powerhouse

This one is super easy:

  • 1 cup lentils
  • 1 cup quinoa
  • 1 can black beans
  • 1  hot pepper
  • 2 cups diced green peppers
  • 1 packet taco seasoning
  • 5 cups water

Bring it all to a boil- cover and simmer until water is absorbed. Voila! Awesome protein rich meal 😉

As always, make sure to rinse your quinoa and caned beans before cooking.

3. Muscle Building Shake

  • 16oz  almond milk
  • 4 scoops of Vega Health Optimizer- Chocolate
  • 1 cup organic mixed frozen berries
  • 2 cups frozen spinach (sounds gross but you can’t taste it)
  • 1 banana
  • 1 cup raw oats
  • 1 tsp cinnamon
  • 1 tsp cacao nibs

Blend all ingredients until smooth. Add more water if thinner consistency is desired.

Makes 2 servings

We  usually start every day with this or similar Power smoothie.

So there you go. All three recipes take less then 15 min to prepare.
